How does the Chicken Caesar Salad taste?

One salad that I really like is the vegetarian Caesar salad. When I was very young, I ordered it in the restaurant - without the chicken. Because I really like the dressing!

The dressing is a real calorie bomb as it consists mostly of mayonnaise. If you are motivated, you can make the mayonnaise yourself or use ready-made mayonnaise if you have to go quickly. I really like the vegan version because I can enjoy it without hesitation even on warm summer days. With a little soy cream I then stretch the dressing so that it becomes a little easier. You are also welcome to use half mayonnaise and half yogurt, but then I would leave out the lemon / lime. For the salty touch, I added a few capers and, as it should be, a good portion of parmesan.

Vegetarian Caesar salad

Classic Caesar salad is made with chicken. In my case, I left this out completely and replaced it with a tomato and an egg. Smoked tofu is also a very good substitute.

dressing

  • 120 g mayonnaise
  • 50 g grated parmesan cheese
  • 1 teaspoon capers
  • 2 tbsp heavy cream
  • 1 teaspoon mustard
  • 1 lime juice
  • salt and pepper

salad

  • 1 head of romaine lettuce
  • 4 white bread slices
  • 3 tbsp butter
  • 4 eggs boiled
  • 4 tomatoes
  • Parmesan shavings

preparation

dressing

  • Puree all ingredients in a food processor to a homogeneous mass.
  • Season to taste with salt and pepper.
  • Warning: capers and parmesan make the dressing salty!

salad

  • Remove the lettuce from the stalk and wash it.
  • Dice the bread slices and fry them in a pan with the butter until golden brown.
  • Wash and slice the tomatoes.
  • Halve the eggs once.
  • Arrange the salad with the dressing, garnish with the croutons, tomatoes, eggs and parmesan shavings and serve immediately.
